Roasted Potatoes Pont Neuf with Apple Barbecue Sauce

Today, my third day of culinary school, was the first day we used our knives! We learned a few cuts yesterday, and were able to practice those cuts on potatoes today. The “Pont Neuf” cut was one of the cuts we learned – this is like a thick matchstick style cut 1 cm by 1 cm, perfect for frying. I decided to bake my “fries” and then served my perfect little fries with a barbecue sauce I made last night.

Apple Barbecue Sauce
1 cup tomato ketchup
– 1/4 cup apple juice
– 1/4 cup white wine vinegar
– 3 Tbs brown sugar
– 3 Tbs molasses
– 1 Tbs paprika

Combine the ingredients in a saucepan and simmer for about 25 minutes. Serve with chicken, pork, steak or with french fries instead of ketchup
